Chocolate Cake

Ingredients:
  • 1 cup (150g) plain flour
  •  2 tsps Salt Skip Baking Powder
  • 1/3 cup (50g) cocoa
  • 1 cup (220g) caster sugar
  • 1/3 cup (80g) butter, softened
  • 1/2 cup (125ml) milk
  • 1 tsp vanilla essence
  • 2 eggs, lightly beaten
     
    Chocolate Icing
Directions:
  1. Preheat oven to 180°C (160°C fan-forced). Grease and flour or grease and line a 24cm cake tin and set aside.
  2. Place all ingredients into a bowl and using a mixer, mix on high for 4 minutes.
  3. Pour into cake tin and bake for 35-40 minutes or until the cake springs back when lightly touched in the centre.
  4. To make chocolate icing sift icing sugar and cocoa powder into a bowl. Add butter and 1 tablespoon of boiling water. Stir until smooth. Spread icing over cake.

Apple Pancakes

Ingredients:
  • 1 1/2 cups milk
  • 1 egg
  • 2 teaspoons vanilla extract
  • 2 cups plain flour
  • 4 teaspoons Salt Skip baking powder
  • 1/3 cup caster sugar
  • 25g butter, melted
  • 2 teaspoons ground cinnamon
  • 1 apple, peeled, grated
  • 2 tablespoons brown sugar
Directions:
  1. Whisk milk, egg and vanilla together. Sift flour and baking powder into a separate bowl. Stir in sugar. Make a well in centre. Add milk mixture. Whisk until just combined.  Stir in cinnamon, apple and sugar. 
  2. Heat a large non-stick frying pan over medium heat. Brush pan with butter. Using 1/4 cup mixture per pancake, cook pancakes for 3 to 4 minutes or until bubbles appear on surface. Turn and cook for 3 minutes or until cooked through.

Butter Biscuits

This recipe is from taste but I have altered it to be low salt.

Ingredients:
  • 125g no added salt butter, softened
  • 1/2 cup caster sugar
  • 1 teaspoon vanilla extract
  • 1 egg, at room temperature
  • 2 cups plain flour
  • 1 teaspoon salt skip baking powder
  • 1-2 tablespoons milk
Directions:
  1. Preheat oven to 180°C. Line 2 baking trays with baking paper.
  2. Using an electric mixer, beat butter, sugar and vanilla in a small bowl until pale and creamy. Add egg and mix until well combined. Sift flour and baking powder over butter mixture. Add milk and stir until just combined. 
  3. Using 2 teaspoons of dough at a time, roll dough into balls. Place on baking trays and flatten biscuits slightly (allow room for spreading).
  4. Bake for 12 to 15 minutes, swapping trays over in oven after 10 minutes, or until light golden.
